CREAMY AND CHEESY KIELBASA AND PASTA ONE POT MEAL



Here is a family friendly one pot meal that is based on a recipe by www.KevinandAmanda.com which is delicious.  I took Amanda’s Spicy Sausage Pasta and made it a little less spicy and more cheesy and creamy.  I like how easy this meal is to make, how it makes plenty, and it tastes so good!  Please give it a try and let me know what you think!



INGREDIENTS:

1 pound Kielbasa, sliced into thin circles
1 tablespoon olive oil
1 cup diced onions
1 teaspoon finely minced garlic
10 oz can Rotel Mild diced tomatoes and green chilis
1 cup half and half or cream




Sliced kielbasa and diced onions
1 ½ cup chicken broth
½ teaspoon salt
½ teaspoon pepper
8 oz elbow macaroni
2 cups shredded Monterey Jack cheese

DIRECTIONS:

Place the tablespoon of olive oil in a dutch oven over medium high heat, once the oil is hot, add the sliced Kielbasa and diced onions.  Cook for   approximately 10 – 15 minutes, until the kielbasa is somewhat browned.  Then add the minced garlic and cook an additional 30 seconds.  Add the can of Rotel, the half and half, the chicken broth, salt and pepper, and macaroni.  Stir well and bring to a boil.  Cover with a lid and turn the heat down to simmer.

Add shredded cheese

After approximately 15 minutes, turn the heat off, remove lid, stir well, then add about ¾ cup of shredded Monterey Jack cheese, stir again.  Add the remaining 1 ¼ cup of shredded cheese evenly to the top and place in the oven and broil for a few minutes until the cheese is nicely melted.


Place under broiler

So delicious!

  1. This is one of my all time favorite dishes to make for my fiance and myself. The left overs are just as great the next day nuked in the microwave. Yum! Always in our weekly meal rotation.
    An idea for a daily post... I always wonder about the Amish community and Social media. Do they partake in anything? How do they get their daily news? Are there any Amish based twitter accounts? Just a thought :)

  2. I'm glad you like this recipe, Jillian. I will research social media and the Amish, but I would have to say that the Amish may hire an Englischer to set up a website for them if they have a business, some Amish may visit the public library to use a computer but mostly the Amish stay away from the internet. It should be interesting to investigate this and find out more. Stay tuned!

  3. I live in Iowa near an Amish community, Kalona, IA, and sell advertising. I was helping this noticeably Amish man one day in person, and I asked him for his email address to send him proofs. I was so embarrassed! He was really nice about it though, so I would say no internet use is pretty standard.

  4. Just want clarification - you put the macaroni in uncooked??

    1. Yes, that is correct. The macaroni goes in uncooked. It will cook in the liquid (the chicken broth and half & half). I hope you enjoy!
